What’s for Dinner??? Stuffed Portabellos and a Greek Salad

The stuffed Portabella Mushrooms – a recipe from the mind and mouth of Teigha

  1. 2 large portabella Mushrooms
  2. 2 broccoli heads
  3. Spicy Mustard
  4. Half an Onion
  5. A block of Feta

Take the mushrooms and scoop out all of the “meat” inside and put it into a bowl. Break up the broccoli into little florets, like the size of your thumb nail.  Add that to the bowl. Now take half your onion and mince it into tiny pieces and add that to the bowl.  Now just take your block of Feta and crumble it into the bowl until you have enough cheese. Mix all these together with a spoon!   Coat the inside of the mushroom with the spicy mustard and then take your filling and stuff your mushrooms.  Put them in the oven at 350 for about 25-30 minutes.  ENJOY!


  1. 1.       A red onion
  2. 2.       A head of romaine
  3. 3.       Kalamata olives
  4. 4.       1 green pepper
  5. 5.       1 yellow pepper
  6. 6.       1 red pepper
  7. 7.       A quarter cup crumbled Feta cheese (can you tell I like Feta??)
  8. 8.       Then use a good greek dressing like Newmans Greek (

Chop up all your veggies and mix in a bowl!! Now time for the dressing:

Ingredients  – Make extra and store in the fridge for the next time!!  (Most of these pre-made in the store have a TON of high fructose corn syrup)

  • 1 1/2 quarts olive oil
  • 1/3 cup garlic powder
  • 1/3 cup dried oregano
  • 1/3 cup dried basil
  • 1/4 cup pepper
  • 1/4 cup salt
  • 1/4 cup onion powder
  • 1/4 cup Dijon-style mustard
  • 2 quarts red wine vinegar

Food makes me happy. Fake food and chemicals being added to my food do not make me happy. I have a growing concern about two major things. 1. The quality of food. 2. Our choice of consumption of food as a nation. With this being said I can understand how an American lifestyle influences fast, easy and cheap to be the three magnet factors to food choice however I think we need to go back to the basics and remember just how easy it is to make good food, good for you without breaking the bank or spending hours sweating away in the kitchen.

    Excellent post thanks for sharing. Food is something I can enjoy all around. If I’m not eating it. I’m reading and looking at pictures about it.
