Apple a Day or Tomato a Day??

It’s been a loooong day, and possibly the longest month in quite a while so if you’re so tired like me and getting ready to pick up the phone to call our favorite pizza delivery service, STOP! This recipe is awesome because it has that tomato flavor like our pizza but even better than that: you can have it done before the delivery guy would even reach your door and it will be waaay healthier!!  Tomato over any other fruit or vegetable has the highest concentration of Lycopene. Sounds exciting right? Well perk up because this does get interesting!!! Studies conducted by Harvard researchers show that when humans consumed up to 10 servings of tomatoes a week, (190z) the risk of developing  prostate cancer was cut by 45 percent. However, its benefits are not limited to the prostate. Italian researchers have found that those who consume more that 7 servings of raw tomatoes lower the risk of developing rectal colon or stomach cancers by 60 percent. Research has also shown that lycopene the antioxidant found in tomatoes is a powerful inhibitor of lung, breast, and endometrial cancer cells.

So without any further ado, On to the recipe:  You say tomato, I say tomahto!! 

  • A box of whole wheat penne
  • 2 tablespoons of olive oil
  • 1 green pepper
  • 1 red onion
  • 15-20 cherry tomatoes
  • A can of crushed tomatoes in juice
  • fresh mozzarella balls (10-15)
  •  a cup of fresh Parmesan
  • 4 tablespoons of chopped garlic

Lets keep it simple.  Boil your pasta. Chop your green pepper, onion, and slice your tomatoes in halves or quarters. Once your pasta is done, drain it and throw it into a baking dish. Meanwhile grab the same pan (I am helping you with dish reduction too here!!) and throw in your olive oil, garlic and veggies. Saute for about 2-3 minutes and spoon into your baking dish with pasta. Mix that all up and then top with your cheeses!!! Sprinkle with salt and pepper for taste! (If you want to add meat, this dish is so versatile, sliced sausage, chicken, and beef would all go great!)  Enjoy!!! This recipe feeds 4-5 and cost a total of $13.00 which included a quick romaine salad on the side with Cesare dressing topped off with the extra fresh Parmesan we had!!

Food makes me happy. Fake food and chemicals being added to my food do not make me happy. I have a growing concern about two major things. 1. The quality of food. 2. Our choice of consumption of food as a nation. With this being said I can understand how an American lifestyle influences fast, easy and cheap to be the three magnet factors to food choice however I think we need to go back to the basics and remember just how easy it is to make good food, good for you without breaking the bank or spending hours sweating away in the kitchen.
