Happenin’ Heirloom Salad

Just in case you hadn’t noticed, It’s SUMMER!!!! I love summers, partly because it’s when I was born but also because of all the gorgeous tomatoes that come to fruition. I’ve been grabbing tomatoes and eating them like apples. (Sprinkled with a little sea salt) When I’ve got an extra minute I’ll throw together a quick tomato sandwich with a touch of mayo. Those bring me back to when I was a kid. Mmmmm. Tomato Sandwiches.  Ok back to the reason for this blog, tomatoes are friggen awesome. Not only do they taste amazing but rumor has it that they pack some pretty powerful health benefits majorly helping with inflammation, fighting certain cancers, and cardiovascular disease.  I feel like I should hug a tomato right now. Happenin’ Heirloom Salad

  • 2 big ripe Heirloom tomatoes (I chose 1 of each color a red and yellow)
  • 1/2 a red onion thinly sliced and quartered
  • 7 leaves of Red Leaf Lettuce chopped
  • 10 Fresh Basil leaves chopped
  • a handful of Chives diced
  • 1 stalk of Celery thinly sliced into small pieces
  • 2 tablespoons of Olive Oil and Vinegar
  • Sprinkle with Sea Salt, Pepper and fresh Oregano

Food makes me happy. Fake food and chemicals being added to my food do not make me happy. I have a growing concern about two major things. 1. The quality of food. 2. Our choice of consumption of food as a nation. With this being said I can understand how an American lifestyle influences fast, easy and cheap to be the three magnet factors to food choice however I think we need to go back to the basics and remember just how easy it is to make good food, good for you without breaking the bank or spending hours sweating away in the kitchen.

    Delicious! I honestly think that there is nothing better in life than a simple tomato salad using big ripe heirlooms with a drizzle of olive oil 🙂 yum!
